Choosing Wine Storage
Wine should be stored in wine racks which are designed to hold the wine horizontally at a slight angle so that the wine remains in contact with the cork. This keeps the cork moist and elastic and prevents it from becoming dried out. If a cork becomes dry it will shrivel becoming smaller in size. If this occurs, the seal on the bottle becomes broken allowing oxygen to enter the bottle. This causes oxidation which destroys the taste of the wine, essentially turning formerly fine wine into expensive vinegar. The racks should be placed in a dark environment to protect the wine from both sun and artificial light. Light can affect the usually stable organic compounds, including the tannins, which contribute to the flavor, aroma and texture of the wine. The bottles should be stored in the dark to eliminate the risk of chemical reactions that may be caused by exposure to light. If you cannot find a wine rack to fit in that perfect location and you are not confident of making your own, consider having a custom wine rack created just for you. While this option is more expensive than an off the rack version, it is still much less than the freestanding units and can keep your wine for years to come.
